Corned Beef Crock Pot Recipe

A tender, slow-cooked corned beef crock pot recipe packed with flavor and perfect for St. Patrick's Day or any comfort food craving. Cooked with carrots, potatoes, and (optional) cabbage.

1 (3-4 lb) corned beef brisket, flat cut, with spice packet

4 carrots, peeled and cut into chunks

8 small red potatoes, halved or quartered

1 onion, peeled and chopped into chunks

4 cups beef broth

½ head cabbage, coarsely chopped (optional)

Instructions

  1. Rinse the corned beef under cold water and place it in your crock pot.
  2. Pour in the beef broth so it surrounds the meat but doesn't cover it completely.
  3. Sprinkle the seasoning packet over the top of the meat.
  4. Cover and cook on LOW for 8-9 hours.
  5. About halfway through, add in the carrots, potatoes, and onion.
  6. One hour before serving, add the cabbage if you're using it.
  7. Remove the meat, slice across the grain, and serve with veggies and a ladle of that broth over top.

Notes

  • If your brisket didn’t come with a spice packet, just toast up a blend of coriander, mustard seed, peppercorn, bay leaf, and a pinch of red pepper.
  • Slice it thin for sandwiches or dice it for an amazing hash the next morning.
