Diet Coke and Cake Mix Recipe

A super simple, surprisingly moist and fudgy chocolate cake made with just a box of cake mix, a can of Diet Coke, and a dollop of Cool Whip on top. A longtime favorite for anyone watching sugar or time.

1 box (18 oz) chocolate cake mix (preferably fudge with pudding)

1 can (12 oz) Diet Coke

1 tub (8 oz) Cool Whip Free or Cool Whip Lite

Instructions

  1. Preheat oven to the temperature listed on the cake mix box.
  2. Grease a 9x13 baking pan.
  3. In a large bowl, combine the cake mix and Diet Coke.
  4. Beat as directed on the box (usually 2 minutes on medium).
  5. Pour the batter into the greased pan.
  6. Bake 5 minutes less than the time listed for a 9x13 cake (e.g., if the box says 28 minutes, bake for 23).
  7. Check for doneness using a toothpick—should come out clean.
  8. Cool the cake in the pan on a wire rack.
  9. Once cool, spread Cool Whip evenly over the top.
  10. Slice, serve, and refrigerate any leftovers (if you have any!).

Notes

  • If you’ve got a sweet tooth but don’t wanna go full sugar overload, this cake’s a great compromise.
  • You can switch up the flavor too—vanilla cake mix with Diet Orange, lemon mix with Sprite Zero… have some fun with it.
  • I like to add a sprinkle of mini chocolate chips on top if I’m feelin’ fancy.
  • And if you’re bringing it to a potluck? Make two pans. One disappears real fast.
