Fluffy, golden pancakes made with classic Bisquick mix – quick to whip up, perfect for cozy mornings, and endlessly customizable with your favorite toppings.

2 cups Original Bisquick™ Baking Mix

1 cup milk (or water for a lighter version)

2 tablespoons vegetable oil

2 eggs

Instructions

  1. Grease or spray your griddle or skillet and heat it to medium-high (about 375°F if you're using electric).
  2. Mix all your ingredients in a bowl until just combined — don't overdo it.
  3. Pour slightly less than 1/4 cup of batter for each pancake onto the hot griddle.
  4. Cook until the edges look dry and bubbles start to form, about 1.5 minutes.
  5. Flip once and cook another 1.5 minutes or until golden brown.

Notes

  • For thinner pancakes, add a little extra milk (try 1 1/3 cups).
  • Cast iron works wonders here. Just trust me.
  • Don't smash the pancakes with your spatula. Let 'em puff up and do their thing.
  • Keep ‘em warm in the oven on low (200°F) until ready to serve.
  • Freeze extras with wax paper between 'em. Reheat one at a time in the microwave for a fast, cozy breakfast.
